Homemade Almond Croissants Recipe

Ingredients

  • Unsalted butter – 50g
  • Caster sugar – 5 tbsp, or to taste
  • Egg – 1
  • Vanilla essence – ½ tsp
  • Almond flour – 1 cup
  • Himalayan pink salt – a pinch, or to taste
  • Croissants – 3-4
  • Almond flakes
  • Icing sugar

Directions

  1. Prepare the Almond Filling:
    • In a mixing bowl, add the butter, caster sugar, egg, and vanilla essence. Whisk together until well combined and smooth.
    • Add almond flour and Himalayan pink salt, and mix thoroughly. Transfer this almond mixture to a piping bag fitted with a nozzle.
  2. Assemble the Croissants:
    • Slice each croissant in half horizontally and place both halves on a baking tray lined with butter paper.
    • Pipe the almond filling onto the base half of each croissant, then cover with the top half.
    • Pipe more almond filling on top of each croissant and sprinkle almond flakes generously.
  3. Bake:
    • Preheat the oven to 180°C and bake the croissants for 10-12 minutes on both grills with the fan setting on until golden and flaky.
  4. Serve:
    • Remove from the oven and let cool slightly. Sprinkle with icing sugar before serving.

These homemade almond croissants make 3-4 servings, perfect for a small gathering or a delightful weekend treat.
