Ingredients

  • Water – ½ cup
  • Garlic cloves – 4-5
  • Ginger – 1-inch piece
  • Boneless chicken fillet – 600g
  • Cooking oil – ½ cup
  • Green chilies – 2-3
  • Himalayan pink salt – 1 tsp, or to taste
  • Tomatoes – 4 medium
  • Whisked yogurt – ¼ cup
  • Red chili powder – ½ tsp, or to taste
  • Garam masala powder – ½ tsp
  • Ginger (julienne) – 1-inch piece
  • Green chilies (sliced) – 2
  • Fresh coriander, chopped – 1 tbsp
  • Crushed black pepper – ½ tsp
  • Additional fresh coriander and julienne ginger for garnish

Directions

Prepare the Ginger-Garlic Water

  1. In a blender, combine water, garlic, and ginger. Blend until smooth and set aside.

Prepare the Chicken Qeema

  1. Roughly shred the boneless chicken fillet by hand until minced. Set aside.
  2. In a wok, heat cooking oil over medium heat. Add the hand-chopped chicken mince and stir until it changes color, cooking for about 3-4 minutes until any moisture dries up.
  3. Add the green chilies and pink salt, mixing well.

Cook the Qeema with Seasonings

  1. Pour in the ginger-garlic water, stir to combine, and cook for 1-2 minutes.
  2. Add the tomatoes and mix well. Cover and cook on medium heat until the tomatoes soften (about 4-5 minutes), then cook on high heat for an additional 1-2 minutes to intensify the flavors.
  3. Remove the tomato peels for a smoother texture.

Add Yogurt and Spices

  1. Add the whisked yogurt, red chili powder, and garam masala powder. Stir well and cook until the oil begins to separate from the mixture (1-2 minutes).
  2. Add the sliced green chilies and chopped fresh coriander, stirring until everything is well-combined.

Finish and Garnish

  1. Sprinkle the crushed black pepper over the qeema.
