- Garlic, chopped – 1 tsp
- Cooked rice – 2 cups (boiled with salt)
- Roasted cumin seeds, crushed – 1 tsp
- Black pepper powder – ½ tsp
- Himalayan pink salt – ¼ tsp, or to taste
- Fresh coriander, chopped – 1-2 tbsp
For the Veggie & Feta Salad:
- Cucumber – 1 medium, diced
- Onion – 1 medium, diced
- Cherry tomatoes – 1 cup, halved
- Black pepper powder – ½ tsp
- Himalayan pink salt – ½ tsp, or to taste
- Lemon juice – 1 tbsp
- Fresh coriander, chopped – 1 tbsp
- Feta cheese – 100g, crumbled
For the Tzatziki Sauce:
- Greek yogurt (hung) – 200g
- Garlic cloves – 2, minced
- Lemon juice – 1 tsp
- Crushed black pepper – to taste
- Himalayan pink salt – ½ tsp, or to taste
- Cucumber – 1 medium, grated and squeezed
- Fresh coriander, chopped – a handful
- Olive oil – 1-2 tsp
Directions
Prepare the Mediterranean Chicken:
- In a blender or grinder, combine fresh basil leaves, garlic, paprika, black pepper, Himalayan pink salt, tomato paste, mustard paste, lemon juice, and olive oil. Blend until a thick, smooth paste forms.

- Add the cooked rice, crushed cumin seeds, black pepper, Himalayan pink salt, and fresh coriander. Mix well and cook until everything is well combined. Set aside.
Prepare the Veggie & Feta Salad:
- In a bowl, combine cucumber, onion, cherry tomatoes, black pepper, pink salt, lemon juice, and fresh coriander. Toss to mix.
- Add the crumbled feta cheese and gently stir. Set aside.
Prepare the Tzatziki Sauce:
- In a bowl, whisk together the Greek yogurt, minced garlic, lemon juice, black pepper, and Himalayan pink salt until smooth.
- Add the grated and squeezed cucumber and chopped fresh coriander. Mix well.
- Drizzle olive oil on top and set aside.
