Ingredients

For the Mediterranean Chicken:

  • Fresh basil leaves – a handful
  • Garlic cloves – 3-4
  • Paprika powder – ½ tsp
  • Crushed black pepper – ½ tsp
  • Himalayan pink salt – ½ tsp, or to taste
  • Tomato paste – 1 tbsp
  • Mustard paste – ½ tbsp
  • Lemon juice – 1 tbsp
  • Olive oil – 2 tbsp
  • Chicken fillets – 2 (about 375g)
  • Cooking oil – 2-3 tbsp

For the Rice:

  • Olive oil – 1-2 tbsp
  • Small onion, chopped
  • Garlic, chopped – 1 tsp
  • Cooked rice – 2 cups (boiled with salt)
  • Roasted cumin seeds, crushed – 1 tsp
  • Black pepper powder – ½ tsp
  • Himalayan pink salt – ¼ tsp, or to taste
  • Fresh coriander, chopped – 1-2 tbsp

For the Veggie & Feta Salad:

  • Cucumber – 1 medium, diced
  • Onion – 1 medium, diced
  • Cherry tomatoes – 1 cup, halved
  • Black pepper powder – ½ tsp
  • Himalayan pink salt – ½ tsp, or to taste
  • Lemon juice – 1 tbsp
  • Fresh coriander, chopped – 1 tbsp
  • Feta cheese – 100g, crumbled

For the Tzatziki Sauce:

  • Greek yogurt (hung) – 200g
  • Garlic cloves – 2, minced
  • Lemon juice – 1 tsp
  • Crushed black pepper – to taste
  • Himalayan pink salt – ½ tsp, or to taste
  • Cucumber – 1 medium, grated and squeezed
  • Fresh coriander, chopped – a handful
  • Olive oil – 1-2 tsp

Directions

Prepare the Mediterranean Chicken:

  1. In a blender or grinder, combine fresh basil leaves, garlic, paprika, black pepper, Himalayan pink salt, tomato paste, mustard paste, lemon juice, and olive oil. Blend until a thick, smooth paste forms.
  2. Coat the chicken fillets thoroughly with the marinade. Cover and let marinate for 30 minutes.
  3. Heat a cast iron pan over medium heat and add cooking oil. Cook the marinated chicken fillets for about 8-10 minutes on each side, or until cooked through and golden brown.
  4. Let the chicken rest for a few minutes, then slice it into strips. Set aside.

Prepare the Rice:

  1. In a wok or large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté for about 2 minutes until fragrant.
  2. Add the cooked rice, crushed cumin seeds, black pepper, Himalayan pink salt, and fresh coriander. Mix well and cook until everything is well combined. Set aside.

Prepare the Veggie & Feta Salad:

  1. In a bowl, combine cucumber, onion, cherry tomatoes, black pepper, pink salt, lemon juice, and fresh coriander. Toss to mix.
  2. Add the crumbled feta cheese and gently stir. Set aside.

Prepare the Tzatziki Sauce:

  1. In a bowl, whisk together the Greek yogurt, minced garlic, lemon juice, black pepper, and Himalayan pink salt until smooth.
  2. Add the grated and squeezed cucumber and chopped fresh coriander. Mix well.
  3. Drizzle olive oil on top and set aside.

  1. On a serving plate or bowl, layer the herbed rice, sliced Mediterranean chicken, veggie and feta salad, and a dollop of tzatziki sauce.
