How to Make Chicken Fried Rice
Ingredients:
Boiling water as required
1 tbsp Himalayan pink salt
2-3 green chilies (Hari mirch)
500g rice, soaked (Chawal)
500g boneless chicken cubes
1 tsp crushed red chili (Lal mirch)
1 tsp Himalayan pink salt or to taste
½ tsp black pepper powder (Kali mirch powder)
2 tsp ginger garlic paste (Adrak lehsan paste)
1 tbsp soy sauce
1 tbsp vinegar (Sirka)
3-4 tbsp cooking oil
2 tbsp chopped garlic (Lehsan)
1 tbsp chopped ginger (Adrak)
½ cup chicken stock (Chicken yakhni)
2 tbsp chili sauce
2 tbsp soy sauce
1 tbsp vinegar
1 tsp Himalayan pink salt or to taste
1 tsp black pepper powder
1 tsp sugar
1 tsp red chili powder (Lal mirch powder) or to taste
1 cup peas (Matar)
1 cup sliced carrot (Gajar)
1 cup diced onion (Pyaz)
1 cup diced capsicum (Shimla mirch)
1 cup diced cabbage (Band gobhi)
½ cup chopped spring onion (Hara pyaz)
Charcoal (Koyla) for smoke
1 tbsp chili sauce
1 tbsp green chili sauce
1 tbsp soy sauce
3 tbsp chopped spring onion leaves (Hara pyaz)
1 tbsp cooking oil
Instructions:
Step 1: Cook the Rice
In a large pot, bring water to a boil.
Add 1 tbsp of Himalayan pink salt and the green chilies. Stir well.
Add the soaked rice and cook on medium flame until the rice is 90% cooked.
Strain the rice and set it aside for later.
Step 2: Marinate the Chicken
In a mixing bowl, add chicken cubes, crushed red chili, 1 tsp Himalayan pink salt, black pepper powder, ginger garlic paste, soy sauce, and vinegar.
Mix the ingredients thoroughly, ensuring the chicken is well coated.
Cover the bowl and let the chicken marinate for 30 minutes.
Step 3: Prepare the Chicken
In a wok, heat 3-4 tbsp of cooking oil.
Add chopped garlic and ginger, sauté for about a minute until fragrant.
Add the marinated chicken to the wok and stir well.
Cook on medium flame for 4-5 minutes, allowing the chicken to brown.
Step 4: Add Sauces and Vegetables
Pour in the chicken stock, chili sauce, soy sauce, vinegar, and a pinch of pink salt and black pepper.
Add sugar and red chili powder, then mix thoroughly.
Cook for another 2-3 minutes on medium heat.
Add the peas, carrots, onions, capsicum, cabbage, and spring onion. Stir everything together.
Step 5: Smoke the Dish
Turn off the heat and give the dish a smoky flavor by placing hot charcoal in a small bowl within the wok. Drizzle a little oil over the charcoal and cover the wok tightly for 3 minutes.
Step 6: Layer the Fried Rice
Take out half of the cooked chicken and vegetable mixture and set it aside.
In the wok, add half of the boiled rice over the remaining chicken and vegetables.
Drizzle chili sauce, green chili sauce, and soy sauce over the rice.
Add the reserved chicken and vegetable mixture, followed by the rest of the boiled rice.
Sprinkle chopped spring onion leaves on top.
Drizzle 1 tbsp of cooking oil over the top and cover the wok.
Step 7: Final Cook
Cook on low flame for 8-10 minutes to let the flavors blend together.
Step 8: Serve
Serve your delicious chicken fried rice hot, garnished with fresh spring onion leaves.
