Mix Sabzi Pakoras Recipe step by step

Ingredients:

For Pakora Batter:

  • 1 cup gram flour (besan)
  • 2 tbsp rice flour (chawal ka atta)
  • ½ tsp roasted and crushed cumin seeds (zeera)
  • ½ tsp Himalayan pink salt (or to taste)
  • ½ tsp red chili powder (lal mirch powder)
  • 1 tbsp crushed coriander seeds (sabut dhania)
  • ¼ tsp baking soda
  • ¼ tsp orange food color (zarda ka rang)
  • ¼ tsp carom seeds (ajwain)
  • 1-2 tbsp fresh chopped coriander (hara dhania)
  • ½ cup water (or as required)

For the Mix Sabzi Filling:

  • 2 medium potatoes, julienned (aloo)
  • 1 ½ cup shredded cabbage (band gobhi)
  • 1 cup julienned carrot (gajar)
  • 1 cup chopped spinach (palak)
  • ½ cup chopped spring onion (hara pyaz)
  • 1 tsp Himalayan pink salt (or to taste)
  • 1 ½ tsp chaat masala
  • 1 tsp dried fenugreek leaves (kasuri methi)
  • 1 tsp cooking oil

For Frying:

  • Roasted grams (bhunay chanay), slit – ½ cup (or as required)
  • Cooking oil (for frying)
  • Chaat masala for garnish

Directions:

Step 1: Prepare Pakora Batter

  1. In a mixing bowl, add gram flour, rice flour, roasted cumin seeds, Himalayan pink salt, red chili powder, crushed coriander seeds, baking soda, orange food color, and carom seeds.
  2. Gradually add water and mix until a smooth batter is formed.
  3. Cover the batter and let it rest for 15-20 minutes.

Step 2: Prepare the Mix Sabzi Filling

  1. In a separate bowl, combine julienned potatoes, shredded cabbage, julienned carrots, chopped spinach, chopped spring onion, Himalayan pink salt, chaat masala, dried fenugreek leaves, and cooking oil.
  2. Mix everything well.

Step 3: Combine and Fry

  1. Add the prepared pakora batter to the vegetable mixture and mix thoroughly.
  2. Heat cooking oil in a wok over low flame.
  3. Take small portions of the mixture in your hand, add roasted grams to each portion, and carefully drop into the hot oil.
  4. Fry the mix sabzi pakoras on low flame until they turn golden and crispy.

Step 4: Serve

  1. Sprinkle chaat masala on the fried mix sabzi pakoras for extra flavor.
  2.
