Crispy Potato Cheese Sandwich step by step


Ingredients:

For the Green Chutney:

  • A handful of fresh coriander (hara dhania)
  • A handful of mint leaves (podina)
  • 3-4 green chillies (hari mirch)
  • 3 cloves of garlic (lehsan)
  • 2 tbsp lemon juice
  • 1 tsp chaat masala
  • ½ tsp Himalayan pink salt (or to taste)
  • 1 tsp cumin seeds (zeera)
  • 1 large ice cube

For the Potato Filling:

  • 4 medium boiled potatoes (aloo)
  • ¼ cup chopped capsicum (shimla mirch)
  • ¼ cup chopped onion (pyaz)
  • ½ tbsp chopped green chilli (hari mirch)
  • 1 tsp crushed red chilli (lal mirch)
  • 1 tsp chaat masala
  • 1 tsp Himalayan pink salt (or to taste)
  • 2 tsp roasted and crushed cumin seeds (zeera)
  • A handful of chopped fresh coriander (hara dhania)

For Assembling:

  • 8 large slices of bread
  • Mayonnaise (as required)
  • Cheddar cheese slices (Olper’s or your choice, as required)
  • 1 tbsp butter (makhan)

Instructions:

Step 1: Make the Green Chutney

  1. In a blender, combine the fresh coriander, mint leaves, green chillies, garlic, lemon juice, chaat masala, pink salt, cumin seeds, and ice cube.
  2. Blend until smooth and set aside.

Step 2: Prepare the Potato Filling

  1. In a mixing bowl, mash the boiled potatoes until smooth.
  2. Add the chopped capsicum, onion, green chilli, crushed red chilli, chaat masala, pink salt, crushed cumin seeds, and chopped coriander.
  3. Mix thoroughly until all ingredients are well combined, then set aside.

Step 3: Assemble the Sandwich

  1. On one slice of bread, spread a layer of mayonnaise and add 1-2 tbsp of the potato filling.
  2. Place cheese slices cut into triangles on top of the filling, then spread the prepared green chutney on another slice of bread. Flip this slice over to form a sandwich.
  3. In a frying pan, melt the butter over medium heat.
  4. Carefully place the assembled sandwich in the pan and toast it on both sides until golden brown and crispy (this recipe makes 4 sandwiches).
  5.
