Ingredients

For the Filling:

  • Ginger garlic paste – 1 tsp
  • Black pepper powder – ½ tsp
  • Himalayan pink salt – ½ tsp, or to taste
  • Paprika powder – ½ tsp
  • Lemon juice – 2 tsp
  • Cooking oil – 1 tbsp
  • Chicken fillets – 200g
  • Onion rings – 1 medium
  • Capsicum (sliced) – 1 medium
  • Boiled corn kernels – ¼ cup
  • Schezwan sauce – 3 tbsp
  • Mayonnaise – 1 tbsp
  • Dried oregano – 1 tsp
  • Crushed black pepper – ½ tsp
  • Crushed red chili – ½ tsp
  • Fresh coriander (chopped) – handful
  • Cheddar cheese (grated) – 50-60g
  • Mozzarella cheese (grated) – 50-60g

For Assembling:

  • Large bread slices – as needed
  • Soft butter – as needed

Directions

Prepare the Filling:

  1. In a frying pan, add ginger garlic paste, black pepper powder, Himalayan pink salt, paprika powder, lemon juice, and cooking oil. Mix well.
  2. Add the chicken fillets, coat them in the spice mix, and cook on low heat until thoroughly cooked, about 8-10 minutes. Let the chicken cool, then roughly chop it.
  3. Chop the onion rings and capsicum, then mix them with the chicken and chop everything together.
  4. In a mixing bowl, combine the chopped chicken and vegetables with corn kernels, Schezwan sauce, mayonnaise, dried oregano, black pepper, pink salt, red chili flakes, and fresh coriander. Mix well.
  5. Add the grated mozzarella and cheddar cheese and combine. Set the filling aside.

Assembling the Sandwich:

  1. Take two large bread slices and apply butter to one side of each.
  2. Spread the prepared filling on one slice, then top it with the other slice of bread (butter side up).
  3. Heat a frying pan over low heat and place the sandwich in the pan, butter side down. Apply butter to the top side and cover the pan.
  4. Grill or cook on low heat until both sides are golden and crispy, with the cheese melted inside. Repeat with the remaining bread and filling to make 4 sandwiches.

Tips for Perfect Schezwan Chilli Cheese Sandwiches

  • Low Heat for Perfect Crisp: Cooking on low heat ensures the bread turns golden and crispy while the cheese melts perfectly.
  • Schezwan Sauce Level: Adjust the amount of Schezwan sauce based on your spice preference.
  • Cheese Mixture: A mix of mozzarella and cheddar creates a perfect melty and flavorful filling.

These sandwiches are best served hot and crispy—perfect for a flavorful snack that packs a spicy punch!
