Easy Cheesy Tomato Pasta Recipe step by step

Ingredients:

For the Tomato Sauce:

  • 2 tbsp cooking oil
  • 1 tbsp chopped garlic (lehsan)
  • 3 medium tomatoes (tamatar), sliced
  • ½ tsp Himalayan pink salt (or to taste)
  • 1 tsp dried Italian herbs
  • 1 tsp paprika powder
  • ½ tsp crushed black pepper (kali mirch)
  • 1 cup water
  • 1 stock cube

For the Beef Mixture:

  • 2 tbsp cooking oil
  • 1 tbsp chopped garlic (lehsan)
  • 1 medium onion (pyaz), chopped
  • 300g lean hand-chopped beef mince (qeema)
  • 1 tsp paprika powder
  • ½ tsp Himalayan pink salt (or to taste)
  • ½ tsp crushed black pepper (kali mirch)
  • 1 tsp dried Italian herbs
  • ½ cup water (or as required)
  • 2 tbsp tomato paste
  • A handful of fresh basil leaves, chopped

For the Pasta:

  • 250g elbow pasta, boiled with salt
  • 50g grated  Mozzarella cheese
  • 50g grated  Cheddar cheese
  • 80g grated  Mozzarella cheese (for topping)
  • Additional fresh basil leaves for garnish

Directions:

Step 1: Prepare the Tomato Sauce

  1. In a saucepan, heat 2 tbsp of cooking oil over medium flame and add chopped garlic. Sauté until fragrant.
  2. Add the sliced tomatoes, Himalayan pink salt, dried Italian herbs, paprika powder, and crushed black pepper. Mix well and cook for 1-2 minutes.
  3. Cover and simmer on low flame for 4-5 minutes.
  4. Pour in 1 cup of water and add the stock cube, mixing until dissolved.
  5. Turn off the heat and blend the mixture until smooth. Set aside.

Step 2: Cook the Beef Mixture

  1. In a wok, heat 2 tbsp of cooking oil over medium heat. Add chopped garlic and onion, sautéing until translucent.
  2. Add the lean beef mince and mix well, cooking until it changes color.
  3. Stir in paprika powder, Himalayan pink salt, crushed black pepper, and dried Italian herbs. Cook for another 1-2 minutes.
  4. Pour in ½ cup of water, mix well, cover, and let it cook for 8-10 minutes.
  5. Add the tomato paste and fresh basil leaves, mixing thoroughly.

Step 3: Combine Pasta and Cheese

  1. Add the boiled elbow pasta to the beef mixture and incorporate the prepared tomato sauce.
  2. Stir in the grated  Mozzarella and Cheddar cheeses until well mixed.
  3. Top with the remaining grated mozzarella cheese and a handful of fresh basil leaves.
  4. Cover and steam cook on low flame for about 4-5 minutes until the cheese melts.

Step 4: Serve

  1. Serve your Easy Cheesy Tomato Pasta hot, garnished with extra basil leaves.
